Homemade mayonnaise

1 egg yolk
tsp wholegrain mustard
1tbsp lemon juice
salt and freshly ground pepper
1 cup light olive oil

Put the yolk, mustard, lemon juice, and season into a food processor.
blend until frothy

Begin adding the olive oil, drop by drop until thickened.
thin with hot water if too thick, otherwise place in the frige for later consumption.
